For mains, the sashimi of Norwegian salmon with king crab, dill and trout roe and the roasted Swedish pork belly with carrot hot sauce, pumpkin, dried kale and roasted garlic are good. A sticky beetroot dessert catches the eye, with old vinegar, liquorice and berries; or smoked ice cream with toasted nuts, tar syrup, salted fudge and cloves.
