If nothing else, you can expect self-proclaimed 'demon chef' Alvin Leung to be unpredictable. The genius, madman and dictator of his innovative BO Restaurant on Ice House Street, Leung is known for his Ramones-like appearance and bizarre food creations. In between barking orders at his staff last week, he informed us about some interesting changes afoot.
For one, he's hired a dim sum chef to assist him with a new lunch menu where traditional offerings like shrimp dumplings and spring rolls have been turned on their heads.
Next, he's recruited French cook Adeline Grattard, who previously worked as sous chef at a two-star Michelin bistro in Paris. Last but certainly not least, Leung let slip he will be opening a branch of BO in London next year. Gordon Ramsey, look out.
'I think people in Europe will appreciate my cuisine more than Hong Kong people,' Leung said. 'I'm trying to do innovative Chinese food and some people from an older generation here just won't accept it. They're used to more traditional flavours and tastes.'
That's what you get for turning lap mei fan (Chinese sausage sticky rice) into an ice cream.
