Our desserts are just delicious and designed by um ... what's his name
You'd figure if someone is the co-owner of a pastry shop, they'd get their culinary information correct at a press conference. However, model/actress Pauline Yam Po-lam happened to neglect some details about the pastry chef who has just created a new line of dessert for her Epoch Coffee Bar & Desserterie. Luckily, they were just minor points, like where he's from and his name.
'Our new series of desserts are designed by a British chef,' Yam (above) flubbed. He's actually French. 'He is brilliant. His name is ... well I don't know how to pronounce his name and he worked in some, some restaurants before.'
For the record, Etienne Irazoqui used to work in popular London eatery Sketch. However, the proof is in the tasting, and his pastries and desserts - all made from imported ingredients and Valrhrona chocolates - were delicious. Irazoqui gave Epoch's staff an intensive 10-day course on preparing his creations.
As Epoch's co-partner Maggie Ching Pui-yee explained: 'He was just as strict as [Gordon Ramsay's] Hell Kitchen, only he didn't yell at anyone.'
The results, though, look as good as they taste. 'Desserts today have to look very sophisticated and exquisite like jewelleries, that's why we put them in a jewellery style display case. I did try each of the new pastries although I am not really a dessert person. But as I am a shareholder, I should be able to give recommendations to my customers.'
Let's hope she learns the names of each dessert.
