Why you can trust SCMP
Simon Graham is the general manager at Morton's in The Sheraton Hong Kong.

Dining for me is usually a last-minute thing and predominantly casual. I prefer friendly service over a formal environment. I like simple things like charcuterie or a cheeseboard with a nice glass of wine.

I love French cheese and my favourite cheeseboard can be found at Chez Patrick Deli (3 Star Street, Wan Chai, tel: 2527 1408). I’ve always been fond of classic French and Italian dishes, such as beef bourguignon or osso buco alla Milanese. Spasso (Empire Centre, 68 Mody Road, Tsim Sha Tsui, tel: 2730 8027) serves up traditional Italian that I very much enjoy.

However, having grown up in Hong Kong, I also need my Asian food hits, and that means all the Asian cuisines. I’m always going to different places for dim sum but an old favourite is Maxim’s Palace in City Hall (2/F, 5-7 Edinburgh Place, Central, tel: 2521 1303).
