Where a Frenchman long in Asia goes for beef brisket and dim sum in Hong Kong and his favourite places to eat in Singapore, Japan, South Korea and Malaysia

Frenchman Nicolas Heretiguian has over 15 years of experience in Asia, having lived and worked in China, Japan and now Hong Kong. He is the general manager, Asia, at Australian Vintage Wines, which recently launched a range of alcohol-free bottles called McGuigan Zero. He spoke to Andrew Sun.
I grew up in the South of France, in Provence, so my food background is Mediterranean with an Italian influence from my mother. Food and wine is an important part of my life. Above all, I’m a huge cheese lover.
The food scene here is truly diverse and amazing. I really enjoy authentic Japanese restaurants where Japanese chefs cook negitoro donburi (tuna and rice), such as June Japanese Restaurant (23 Wing Hing Street, Tin Hau, tel: 2234 6691).


For local choice, I like authentic and historical places such as Kau Kee (21 Gough Street, Central, tel: 2850 5967). Their beef brisket is a must try and the atmosphere of sharing your table with a random customer is a very convivial and a fantastic way to meet local people.
