We are in for a scorching summer – and one of the best ways to beat the heat is to consume a huge bowl of flavoured shaved ice.

Many Asian countries have their versions of the icy treat – ais kacang in Malaysia, chendol in Singapore, nam kang sai in Thailand or baobing in Taiwan, for example – but one of the most popular and well-known around the world is Japan’s kakigori.

This shaved-ice treat is one of the most sought-after desserts when travellers go to Japan in the summer.

Korea also has its own version, called bingsu. But why is it not as popular as kakigori on the world stage?

“I think Japanese shaved ice is definitely in its own category,” says Kaila Imada, owner of the kakigori-focused Instagram account @kakigori.kaila.
