Dora Kam is the senior wine specialist at Bonhams auction house. She spoke to Andrew Sun.
I grew up in a household full of excellent cooks. My grandmother specialised in traditional Chinese desserts, while my mother excelled at cooking abalone, fish maw and sea cucumber.
Over time, my own standards for food were shaped by their influence. To me, good food and the enjoyment of wines and spirits always go hand in hand.

Roast meats and fine wine are a match made in heaven. Kamcentre Roast Goose (1/F, South China Athletic Association, 88 Caroline Hill Road, Causeway Bay. Tel: 3580 2938) is my absolute favourite lunch spot. It specialises in a melt-in-your-mouth fatty char siu cut from the pork neck, and the roast goose is legendary. For a taste of old Hong Kong, try the shrimp-roe-stuffed pork knuckle and fried beef noodles with aged tangerine peels.

Ju Xing Home (418 Portland Street, Prince Edward. Tel: 2392 9283) is the place to go for authentic Cantonese cooking’s incredible wok hei. My personal favourites are the Stir-fry King (wok-fried garlic chives, dried seafood and cashews) and the flawlessly steamed fish. A huge plus for wine lovers: it provides proper wine glasses for BYOB guests.

For a late-night supper, my top pick is Lai’s Kitchen (1/F, Harvard Commercial Building, 105-111 Thomson Road, Wan Chai. Tel: 6803 1818). Open until 1.30am, it offers an extensive menu of classic Cantonese stir-fries and signature claypot rice – the ultimate comfort food after a long day. What truly sets it apart for wine enthusiasts is the welcoming BYOB policy, with a modest corkage fee and high-quality Lehmann glassware provided.
