Frenchman Thibault Casoli is regional sales manager for Greater China, Japan and Korea at the family-owned champagne house Billecart-Salmon. He spoke to Andrew Sun.

I am from Bordeaux, and I grew up eating a lot of game, including duck. Bordeaux is famous for this and lots of seafood. My parents had an Italian friend who would visit a lot, so I also ate a lot of home-made Italian food. These are my two biggest influences.

For a fast lunch, I go to Spiga (3/F, LHT Tower, 31 Queen’s Road Central, Central. Tel: 2871 0055). The Italian lunch buffet is a no-brainer. It is very tasty and healthy with very fresh produce, and you can also add a main course. It is one of the best deals for lunch, and you are always well taken care of.

My brunch choices come down to two places. Francis West (42-44 Peel Street, Central. WhatsApp: 9039 0969) is where I often end up. You can keep ordering from the menu, and everything is shareable. The wine selection is great. I love Middle Eastern-style food, so I love the place. It is also very cosy.

A more Asian-style brunch is dim sum at Maxim’s Palace (2/F, City Hall, Edinburgh Place, Central. Tel: 2521 1303). The view is one of the best, and the space is huge. You might have to queue, but the food is really good. There is a wide choice, whether you’re ordering à la carte or chasing down the dim sum carts.

For an even more local experience, I would go to Kamcentre Roast Goose (1/F, South China Athletic Association, 88 Caroline Hill Road, Causeway Bay. Tel: 3580 2938). The goose is absolutely divine, and I love the setting. You can go bowling at the South China Athletic Association’s bowling alley before or after you eat. And the restaurant has a hidden menu that is worth trying. It is also not crazy expensive.
