Howard Cai is famous for bringing out the natural flavours in Chinese cuisine, and has garnered a celebrity following since establishing Howard’s Gourmet Workshop in Guangzhou 13 years ago.

The interior of his Hong Kong restaurant, by David Tang, is elegant, with high ceilings, heavy drapes and French windows and crystal chandeliers.

The dishes are elegantly presented. We loved the crispy sea cucumber, hot and sour noodles and the Chinese sausage with cheese. There is no à la carte, only set lunch and dinner menus, with seasonal dishes, so come with an appetite. There is a bar for pre- or after-dinner drinks, where Cai’s own brand of whisky is served.
