Lai Heen, Macau

Macau’s highest Chinese restaurant is on the 51st floor of The Ritz-Carlton. Meticulous attention to detail has been given not only to the menu, but the décor too, which offers subtle nods to Macau’s Chinese and Portuguese heritage.

Chef Fu Man-piu, previously with two-star Michelin restaurant Tin Lung Heen in Hong Kong, oversees the menu. The degustation set menu with wine pairing is impressive; seasonal recommendations include steamed cod fillet with Panax ginseng, snow date and black fungus and double-boiled venison tendon with sea cucumber and birch seed. For dessert, try the chilled fig with blueberry in red wine sauce. The wine list offers over 500 labels.
