Set inside Roganic Hong Kong, Aulis is Simon Rogan’s intimate chef’s table offering an interactive experience. Dinner starts at 7pm, and chefs take you through 16 courses as you watch them at work.

Signatures include lobster, caviar, crumpet and apple – a layered lobster snack starting with pickled celery, then lobster dressed in a lemon emulsion. On top is a jelly cherry tomato. The dish is finished with two types of caviar, house blend and smoked pike perch, and served with waffles fried in lobster shell oil to refresh and flavour them.

Sommeliers offer pairings of wine or a flight of non-alcoholic drinks. The restaurant can seat 12.
