Channelling a Zen aesthetic, Kyoku’s 3,000-sq-ft interior has a sushi and teppanyaki counter and three private rooms. The extensive dinner menu includes sets and à la carte; the sake list is sizeable. Omakase at the sushi counter includes an appetiser, eight kinds of sashimi, a hot dish, five pieces of sushi and soup. The table setting is immaculate, with sauces and pickles beautifully laid out and wasabi prepared fresh from the root. We watched engawa fish, scallops, snapper and halfbeak meticulously sliced and plated. The teppanyaki “Ennju” set featured abalone, scallops, clams, cod, Wagyu, fried rice and vegetables. End with green tea pudding – smooth and delicate.
