Xin Rong Ji has put Taizhou cuisine on the map in Hong Kong. The restaurant chain also has locations in Beijing, Shanghai, Hangzhou and Shenzhen, and the capital flagship received the coveted three Michelin stars in the Michelin Guide Beijing 2021. Fish is prominently featured in Taizhou cuisine and the wild-caught yellow croaker is legendary (and will set you back a pretty penny). Meanwhile the tofu dishes, noodles as well as soups reflect the epitome of refined execution.

Roast duck is also a signature dish here – the crisp-as-wafer breast is sliced separately for individual enjoyment before the rest of the bird is cut up and devoured with pancakes.
