I Know A Place: Pierre Perusset, general manager of The Ritz-Carlton Hong Kong

I love to eat healthy organic food as much as possible. I believe that knowing what to eat, and when to eat it, has a direct impact on my level of energy, my state of happiness, my sleep, and my overall balance.

I love to eat healthy organic food as much as possible. I believe that knowing what to eat, and when to eat it, has a direct impact on my level of energy, my state of happiness, my sleep, and my overall balance.

But I occasionally enjoy eating things that are not necessarily known to be healthy, such as Swiss cheese fondue. I also love to eat local food when I travel. Street food is a wonderful experience which allows me to experience the culture and interact with local people.

Of course, my favourite restaurant is our Michelin one-star Italian, , and our Michelin two-star Cantonese restaurant , (both at 102/F The Ritz-Carlton, ICC, 1 Austin Road West, Tsim Sha Tsui, tel: 2263 2270).

When I go out, I like good hotpot, and for that I go to (5/F Lucky Centre,165-171 Wan Chai Road, Wan Chai, tel: 2866 8305). I always order the cheese soufflé broth.

I also enjoy (shop G63 Ocean Terminal, Harbour City, 17 Canton Road, Tsim Sha Tsui, tel: 2730 7900) which has very good Italian food. I enjoy dining on the terrace, looking at the ferries, and the buildings on Hong Kong side.

I like to take my guests for lunch at the restaurants around Stanley Market. We have a fun lunch on one of the many terraces there, followed by a walk to the old Buddhist temple.
