A recent arrival to The Pulse at Repulse Bay is the contemporary Japanese dining outlet Shoku, offering authentic binchotan grills. The charcoal grill is the restaurant's centrepiece, and diners can choose to sit on high stools overlooking the chefs at work in the open kitchen, at a table or in one of the private rooms. The beachside restaurant offers à la carte and tasting menus, and Japanese small plates with drinks.

We loved everything we tried, from the starters of crispy codfish wafers (HK$68), flash-fried Japanese baby shrimp (HK$88) and Japanese free-range chicken (HK$228) to the binchotan grilled whole scallop, abalone, wagyu flat-iron and rib-eye, and sagabuta pork collar skewers (HK$68). The chicken and shrimp dishes were crispy without being oily and would be popular with children. The fresh avocado salad with shoyu dressing (HK$128) was a particularly enjoyable choice from the fine selection of salads, and there are noodle and rice dishes as well.

We ended with the dessert platter of deep-fried Hokkaido milk green tea pudding, aduki bean dorayaki and signature green tea panna cotta (HK$188 for two). There is a good selection of Japanese teas, whiskeys, cocktails and other drinks.
