Rosewood’s The Legacy House delivers a genuine taste of Shunde cuisine

The Legacy House, Rosewood Hong Kong’s Chinese restaurant, offers refined Cantonese cuisine from Shunde district along with some famous Northern Chinese dishes including Peking duck and Shanghainese dumplings. The restaurant’s name pays homage to the Cheng family, owners of the Rosewood Hotels & Resorts, who hail from Shunde. Chinese executive chef for Rosewood Hong Kong Li Chi-wai, previously with MGM Macau, is also a native of the city, which is regarded as the cradle of Cantonese cuisine.

We started with pan-fried dace fishcake (HK$170), enough for three to four people, and minced fish soup (HK$220). We could taste the freshness of the ingredients and levels of flavour in the soup – Shunde cuisine is known for its freshwater fish.The wok-fried chicken fillet (HK$250) featured large pieces of tender fillet, and we loved the levels of chilli peppers as they hit the palate.

Shanghainese dumplings at The Legacy House
The wok-fried milk Daliang style (HK$480) with bird’s nest was deliciously delicate and flavoursome. This is a signature dish from Daliang, a district of Shunde known for its cows, and the type of milk used the dish is known as shui niu nai or “water milk”, which is taken from cows in the early morning. We were told it is a difficult dish to perfect but they have certainly mastered it here. We also enjoyed the stir-fried fish noodles (HK270), steamed egg-white wrap (HK$170) and steamed Shanghainese pork dumplings (HK$80). For dessert, the chilled sago, mango and pomelo (HK$90) soup was deliciously refreshing. We also tried the red bean soup with sesame dumplings (HK$80) and the sweetened almond cream (HK$90). The restaurant overlooks the harbour and has an outdoor terrace, open kitchen and a sophisticated contemporary vibe. There is an extensive Chinese tea menu to go with lunch or dinner, or you can try one of their Chinese-inspired cocktails.
