Stable has morphed several times in the past few years, but its latest incarnation is a steak house. Now run by Lifestyle Federation, the menu is more focused than its predecessors. The setting is the same, though – a former stable in the old marine police station in Tsim Sha Tsui – and includes outdoor seating, which we opted for on a pleasant evening.

We started with USDA prime beef tartare (HK210) with parsley, Dijon mustard and hand-cut tenderloin. As the tartare was very rich, the plate was enough for two. It was good quality meat but we found it a bit tart. The Caesar salad (HK$130) was cute as the shaved Parmesan, focaccia croutons and anchovies sat on the lettuce leaf like a boat, producing about two tasty mouthfuls.

For mains, we went for the rib-eye (HK$880, 20oz) and the Australian rack of lamb (HK$420 for half, HK$760 for whole). Both were cooked medium and were tender and juicy. For sides we went for the garden potatoes with sea salt and herbs and the potato purée with butter and also creamed spinach with nutmeg (HK$80 each). Our favourite was the potato purée, which was smooth, rich and buttery.

For dessert, we chose the lemon basil mousse (HK$120) with flamed meringue, caramel sauce and lime sorbet – a light and refreshing finish to a heavy meal. We then went upstairs to the new Stable bar, which once was a whisky bar but now boasts the biggest selection of gin in town. It’s old-school leather chairs and sofas provided a pleasant setting to end the evening.
