Rùn restaurant at The St. Regis Hong Kong evokes the refined culture of Chinese tea pavilions

The decor at contemporary Chinese restaurant Rùn is inspired by Chinese tea pavilions, and the theme is continued in the menu, offering exquisite selections of Chinese tea such as 30-year-old supreme Pu’er, Li Shan oolong and Wuyi Dahongpao.

The kitchen is headed by renowned chef Hung Chi-kwong, previously with Man Wah at the Mandarin Oriental. We visited the new restaurant to sample his dim sum, and were not disappointed.

The service was helpful and efficient, with staff recommending some healthy dishes such as the steamed rice roll with scallop and asparagus (HK$118 for six pieces) and steamed vegetable dumplings with wild mushrooms and beetroot (HK$68 for three pieces), which were tasty and done well. We also tried the steamed pork xiaolongbao (HK$78 for three pieces), done in a more northern style with a thicker wrapping, but there was plenty of warm soup and pork inside.

One dish not to miss is the deep-fried dice Wagyu beef puff with black pepper sauce (HK$98 for three pieces) – the silky pastry and beef melted in the mouth, and were divine, as was the signature char sui.

Returning to the healthy fare, the soups were not just good for us but delicious. We went for the double-boiled silky chicken soup with wild red mushrooms (HK$268 per person). The clear red broth was deliciously delicate and soothing. The braised shredded chicken soup with fish maw (HK$268 per person) was more hearty and we enjoyed the texture of the crispy rice that accompanied it. The braised hot and sour soup with seafood, bean curd and fungus (HK$208 per person) was done to perfection. The sweet almond cream soup made the perfect ending to lunch.
