Opening at the Cubus, where TOWN once stood, Castellana offers authentic Piedmont cuisine in collaboration with two Michelin-starred chef Marco Sacco and his restaurant Piccolo Lago.

The interior features muted tones of golds with deep blues and leathers, and its tables are topped with white linen cloths. The restaurant seats 50 and offers two private rooms for up to 12 guests.

There are three tasting menus of four or seven courses. We tried the seasonal seven-course tasting menu (HK$1,580). There is a small à la carte menu with traditional Piedmont dishes such as veal tuna (HK$288), Savoy cabbage with toma cheese in roast potato broth (HK$258), river salmonata with red currants (HK$398) and for dessert, custard with plums, tiramisu chocolate and amoretti pudding (all HK$128) or a cheese platter (HK$198). Piedmont cuisine is known for its concentrated flavours and silky textures.

On our tasting menu however, we had a smoked lake trout starter with caviar followed by risotto with black garlic and river prawns which was rich with an al dente texture. Other dishes included home-made tagliolini with carbonara sauce and Valle Vigezzo cured ham, Coregone lake fish glazed with black berry and the Fassone beef.
