Habitués of Central all know that tucked-away spot at Landmark Prince’s, inside the Landmark complex. Best known for its Maxim’s fast food establishment CanTeen, it was once occupied by Terroir Parisien.

The name of this new Japanese restaurant, Kakure, translates as “present yet absent” and plays on its obscure location within the mall.

Once you find it, you will discover a warm welcome among its comfortable interior and awesome whisky bar near the entrance. The 3,000 sq ft premises is large enough to accommodate a sushi bar, teppanyaki counter and private rooms, making this a truly versatile space.

We start with a white corn and glass prawn salad (HK$78) which is served with a refreshing jelly vinaigrette. The superior shellfish’s sweetness is enhanced by crunchy and sweet vegetables, just what we need to whet our appetite.

Next is a Hokkaido Ezo abalone tempura (HK$620) that is perfection on a plate. The surface is thinly battered and fried crisp while leaving the mollusc’s flesh tender and juicy – a testament to the chef’s skill.

From the teppanyaki counter comes the lobster (HK$1,180). The shellfish is cooked in its fat and juices, making each bite aromatic, with the juices sealed in by the hotplate.

To anchor the meal, we opt for the eight-piece deluxe Edomae nigiri sushi (HK$450). The line-up for the set changes seasonally, but each cut is supremely fresh, sliced with superior knife skills, and topped with the perfect amount of rice.

Kakure is the full package when it comes to a night out in town. You might not find it unless you are looking for it, but those seeking a great dining spot should not miss it.
