Take a foodie journey through Bali’s cuisine at The Warung at Alila Villas Uluwatu

Diners at The Warung at Alila Villas Uluwatu in Bali have been promised a gastronomic feast.

The Warung at Alila Villas Uluwatu invites guests to indulge in a gastronomic tour of Bali courtesy of its “8 Regencies”.

Spanning four nights this summer and spearheaded by four renowned guest chefs, the 8 Regencies Journey will showcase Indonesian ingredients found on the island.

The Warung is a must for visiting foodies seeking to explore Indonesia’s culinary heritage. For each feast, a chef incorporates signature ingredients from two of Bali’s eight regencies – districts that loosely mirror old kingdoms – into a singular gastronomic experience that shows off the best of Bali.

The Journey kicked off in June with Kieran Morland, once of Momofuku, working with the Karangasem, and the underappreciated Buleleng, regencies and their Boni (Balinese berries), cassava, kluwek and andaliman, among other savoury ingredients.

The next stop is August 9, in Badung and Bangli, with Hotel Indigo executive chef Nic Philip, who will innovate with popular fruits such as salak (snake fruits) and Plaga pineapples.

On September 25, The Warung welcomes former Acadia and Blue Hill at Stone Barns’ Wayan Kresnayasa to explore under-the-radar Negara and Klungkung by transforming local favourites into fine-dining experiences using kaffir lime, coriander and turmeric.

The Journey concludes on October 10 with Nusantara by Locavore’s Putu Dodik sampling shallots and black pepper from Tabanan and Gianyar.
