His signatures include double-boiled silkie fowl with sea conch and Chinese herbs, scrambled egg whites with bird’s nest, scallop and crab roe, and braised wild fish maw in abalone sauce. The dim sum is also good with sharing dishes of baked honey-glazed barbecue pork puffs, steamed lobster dumplings and steamed walnut custard buns.
