Tuna tops exceptional fare at Sushi Tokami

Established in Ginza, Tokyo in 2013, Sushi Tokami has already earned a Michelin star and is considered one of the best sushi restaurants. It's famed for tuna dishes - the owner also founded Yamasachi, a shop dedicated to tuna in Tsukiji Market.

Sushi Tokami Hong Kong has two rooms with eight and 10 seats. The chef's recommended omakase menu costs HK$2,000 a head. We watched as the chef, who was here from the Ginza eatery, made our sushi. We tried part of the omakase menu starting with the famed hand-rolled tuna neck - the rice was soft and tasty with a hint of red vinegar. It was a good start. The food was served in an order of mild to stronger tastes.

We continued with yellow tail, served with a juicy turnip, followed by abalone from Chiba served with black salt, which complemented the tender abalone. The smoked mackerel was mild and the skin crispy, while the squid sushi melted in the mouth. We tried three pieces of tuna sushi ranging from lean to fatty, which were deliciously fresh, followed by generous portions of the shrimp and sea urchin. The restaurant is also famous for its eel and, after tasting, we know why. But the egg with yam and shrimp was oddly spongy. We ended with a bowl of warm tuna collagen soup.

All in all, the sushi here is excellent, and the eatery is worth visiting if you have guests to impress.
